Dr. Miller Publishes Paper in Nutrients Journal

Dr. Melissa Miller, visiting assistant professor of Public Health, recently published an article in the journal Nutrients, titled, “A Randomized Controlled Trial Testing the Effectiveness of Coping with Cancer in the Kitchen, a Nutrition Education Program for Cancer Survivors.”

The paper examined the effects of the Coping with Cancer in the Kitchen (CCK) in-person program compared to just receiving CCK materials in the mail. Knowing that plant-based diets may reduce incidence and mortality rates in cancer, the program aimed to transition people to plant-based diets.

The study found that “participation in CCK in-person increased knowledge, skills, and confidence and reduced barriers to adopting a plant-based diet.” As well as arguing that “positive trends in intake of plant-based foods and quality of life warrant further investigation in larger-scale studies and diverse populations.”
